Tequila Lime Pork Chops with Black Bean Corn Medley

This recipe would also be delicious with chicken.

1 package  Weber® Tequila Lime Marinade Mix
1/4 cup  Mazola® Corn Oil
1/4 cup  water
 center-cut pork chops
2/3 cup  canned black beans, drained and rinsed
1/3 cup  frozen corn, thawed and drained
1/4 cup  finely diced red onion
1-1/2 tablespoons  minced jalapeno peppers
1 cup  shredded Chihuahua OR Monterey Jack cheese
Combine marinade mix, oil and water in a large resealable plastic bag. Add pork chops and marinate in the refrigerator at least 30 minutes for flavors to develop.

Combine black beans, corn, onion and jalapenos in a medium mixing bowl; set aside.

Preheat grill to medium-high heat.

Remove pork chops from marinade; discard marinade. Grill over Direct Medium heat for 15 to 20 minutes, turning once, until pork is cooked is cooked through and at least 150°F.  Remove from grill to serving plate. Top with Black Bean Corn Medley, sprinkle with cheese and cover with foil for 5 minutes before serving.
