Cheddar Stuffed Rub-Rimmed Bacon Burgers

1 pound  ground sirloin
1 pound  ground chuck
8 ounces  favorite smoked bacon, diced and cooked just under crispy
1-1/2 teaspoons  Weber® Gourmet Burger Seasoning
 cubes (2-inches each) sharp cheddar cheese
2 to 4 tablespoons  Weber® Gourmet Burger Seasoning
 hamburger buns OR Kaiser rolls, buttered
6 slices  cheddar cheese, optional
Favorite  toppings and condiments

Being careful not to over-work the meat, mix the sirloin, chuck, cooked bacon and 1-1/2 teaspoons seasoning just until combined.

Portion the meat into 6 equal patties; shape each patty around one cube of cheese and set aside.  Pour the additional seasoning onto a shallow plate.  Roll the rim of each burger in the seasoning until it is coated in a "stripe" of spice.

Place burgers on the cooking grate and grill over Medium Direct heat until the meat is no longer pink, 8 to 10 minutes, turning once halfway through grilling time.  If using additional cheese, top each burger with cheese after you turn it.  Meanwhile grill the buttered buns over Direct heat until lightly toasted, if desired.

Serve immediately on the buttered rolls with a lettuce leaf and tomato if desired.  Serve with favorite toppings and traditional condiments on the side - I especially like spicy or Dijon mustard.
