Focaccia Pork Sandwich

Delicious!

2 pounds  pork loin roast, boneless
1-1/2 tablespoons  Weber® Chicken 'N Rib Seasoning
1 loaf (12-inch)  focaccia bread, split horizontally and toasted
2 to 3 tablespoons  coarse grain brown mustard
6 ounces  Swiss cheese, sliced
1 large  tomato, sliced
10 to 12  dill pickle slices

Rub seasoning into pork roast. Cover and grill over Indirect Medium heat for 1 to 1-1/2 hours or until meat thermometer registers 155º F. Remove meat from grill. Cover with foil; let stand for 10 minutes before carving.

Thinly slice meat across the grain. Spread mustard on bottom and top halves of bread. Layer bottom half with pork, Swiss cheese, tomato slices and pickles. Place top of bread on sandwich; cut into 6 wedges.
